Changes the status of the booking organization. When setting status to SOFT_DELETED, the organization will be scheduled for deletion and will be permanently deleted after the grace period configured in the system. The response includes the delete_at field indicating when the organization will be permanently deleted. Setting status to ACTIVE restores a soft-deleted organization.
